Ingredients
prepared graham cracker crust
3 (8 oz.) packages cream cheese, softened
¾ cup + ¼ cup granulated sugar
½ cup sour cream
2 teaspoons + ½ teaspoon pure vanilla extract
3 tablespoons all purpose flour
3 eggs
¼ cup cocoa
1 tablespoon vegetable oil
1) Preheat the oven to 450 degrees F.
2) Meanwhile in a mixer bowl combine the cream cheese, ¾ cup sugar, sour cream, and 2 teaspoons vanilla extract. Beat on medium until the mixture is very fine and smooth. Add flour a single teaspoonful at a time until well mixed, add the egg then beat again to mix thoroughly. Set aside.
3) In a separate bowl combine the cocoa and ¼ cup sugar. Add the oil, ½ teaspoon vanilla extract, and 1 ½ cups of the cream cheese mixture and blend very well.
4) Put some of the chocolate mixture into the prepared graham cracker crust, alternating with the vanilla mixture to the top. Finish with a chocolate dollop and swirl to create a marbleized effect.
5) Bake the cracker for 10 minutes; decrease the oven temperature to 250 degrees F, and bake for a further 30 minutes.
6) Turn off the oven but do not open the oven door. After 30 minutes remove the cheese cake from the oven.
7) Loosen the cake from the sides of the baking pan and set it on a wire rack to cool some more.
8) Serve when chilled.
