A Cake also for Diabetics

This cake recipe especially designed for diabetics is flavored with raisins, applesauce, cinnamon, nutmeg, and vanilla. Made with artificial sweetener diabetics can enjoy the occasional cake with this recipe. Eggs, all-purpose flour, vegetable oil, baking soda, and salt are the other ingredients used to make this recipe. Those who have diabetes require a strict and planned nutrition and need to cut down sugar from their diet. Craving for sweets can be quite a struggle. One way to curb cravings for something sweet is to use artificial sweeteners or sugar substitutes, which are often low in calories. These are used to sweeten drinks and foods for less carbohydrates and calories than regular sugar. Typically they have a lot more sweetening power than regular sugar and require only a small amount when they are used as a sugar substitute. A lot of these sugar substitutes cannot be broken down by the body (except for aspartame) and pass through the system without being digested, thus providing no extra calories.

The five artificial sweeteners approved by the U.S. Food and Drug Administration (FDA) includes acesulfame potassium (also called acesulfame K), aspartame, saccharin, sucralose, and neotame. These sweeteners are often used by commercial food companies to make diet products including drinks, candies, desserts, baked goods, and chewing gum. Another popular sugar alternative is Stevia, also sold as Reb-A, rebiana, or Rebaudioside. Reb-A is a processed and purified product derived from the stevia plant, which is a hundred times sweeter than regular sugar. As long as it is used in appropriate amounts Stevia or Reb-A are considered to be safe as a food additive and table top sweetener according to the U.S. Food and Drug Administration (FDA).

Ingredients

1/2 cup water
3/4 cup raisins, seedless
1 cup applesauce - unsweetened
2 large eggs – well beaten
1/2 cup artificial sweetener
3/4 cup vegetable oil
1 teaspoon baking soda
1/4 teaspoon cinnamon
Dash of nutmeg
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup flour, all-purpose

1. Pour the raisins in a saucepan. Then cover with the water. Cook over low heat until raisins are soft.

2. Drain away the excess water. Mix the raisins with the applesauce, eggs, sweetener and cooking oil. Blend well. Stirring well add the remaining ingredients.

3. Into a greased baking pan pour the batter. In a 350 degrees F. preheated oven bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
