Ingredients
1 (3 ½ lb.) leg of lamb (bone in)
3 tablespoons butter
2 cloves garlic, minced
½ teaspoon cumin seeds
¼ teaspoon paprika
Cayenne pepper
Salt
1- Whip the butter in a bowl, and then add the spices, garlic, paprika, salt, and cayenne pepper. Mix this mixture well.
2- Place the leg of the lamb in a shallow dish and apply the mixture evenly all over it. Use your hands and rub the mixture thoroughly over the entire leg of the lamb.
3- Marinade the leg for 24 hours in the fridge or for at least 2 hours.
4- Pre-heat the oven at a temperature of 350o. Place the leg of the lamb in the oven and after almost one hour and ten minutes reduce the temperature of the oven to 120 or 125 degree.
5- The juices can also be used if you want to make gravy and for this you have to pour some fat from the roasting pan, add some boiling water and cook over medium to high heat for 2-3 minutes.
6- Pour the juices of the roasted lamb into and serve along with the lamb. Moroccan leg of lamb is served along fresh green salad and different types of sauces. This flavorful recipe is not difficult to prepare and is a great selection for summer parties.
