Grilled corn is considered to be an excellent choice for a BBQ party and is quite easy to prepare. The corn can be grilled either by direct grilling or by indirect grilling. Grilled corn can also be served along with different meats. This is a very healthy and flavorful recipe which is usually added in the summer dinners. Ingredients
¾ cup plain yogurt
¾ cup mayonnaise
5 tablespoons freshly squeezed lime juice
1 cup grated Parmesan cheese
4 teaspoons chili powder
2 teaspoons cayenne pepper
2 teaspoons ground cumin
1 teaspoon salt
8 ears of fresh corn
1- In a small bowl, mix yogurt, salt, pepper, mayonnaise, fresh lime juice, chili powder, and cayenne powder.
2- In the meantime, heat the grill on medium temperature and spray it with any oil.
3- Brush all the ears of corn oil and then apply the mixture evenly on all of them. Make sure that the mixture is applied equally on all the sides.
4- Place the corn ears directly on the pre-heated grill and cook it 20-25 minutes.
5- For an even cooking, keep on changing the sides of the corn during grilling and also brush it with oil.
6- Remove the corn ears carefully from the grill into the plate and brush it with some yogurt. Before serving, don’t forget to sprinkle some parmesan cheese all over the corn. The grilled spicy corn can also be garnished with some fresh lime juice and fresh coriander. Besides direct grilling, the corn can also be grilled by wrapping each corn ear in an aluminum foil. In this way, the corn gets cooked evenly and the time taken is same as that of direct grilling. Normally, the time consumed in preparing grilled spicy corn is no more than 30 minutes. Grilled spicy corn seems great when served immediately after removing from the grill. This healthy as well as flavorful recipe can be served as a main dish or as a side dish.
