Ingredients
1 young rabbit, about 2 ½ lbs.
2 teaspoons sea salt
¼ teaspoon freshly ground pepper
6 tablespoons butter
1 cup chicken or vegetable stock
3 tablespoons freshly squeezed lemon juice
6 tablespoons orange juice
1 small onion, chopped
Ground ginger
1 cup sliced mushrooms
1) Prepare the young rabbit by washing it in cold water and
pat it dry. Set it aside.
2) In large bowl mix flour, salt and pepper. Dredge the
rabbit in the mixture and ensure that it is completely covered.
3) Put some butter in a large skillet and melt over medium
heat. Once ready cook the rabbit until it turns golden brown, turn it and cook
all sides until brown too.
4) Drain any excess fats from the skillet. Return the rabbit
onto the skillet and add chicken stock, juices, onions, ground ginger, pepper
and salt to taste. Cover the skillet and simmer the mixture for about 1 hour or
till the rabbit turns tender and soft.
5) During the last 15 minutes of the cooking add the
mushrooms.
6) Remove the rabbit and place it on a platter.
7) In a shallow pan mix flour and water stir in the pan
juices and serve this sauce together with rabbit on the side.
