Making Healthy Recipes



As an undeniable need of humans, meals play a crucial role in our daily lives. Often times it can be hard to obtain not only healthy ones, but also ones that are relatively fast and easy to make. A few examples of quick and easy gourmet recipes may need stating.

There are numerous categories to look into. These include major meals like breakfast, lunch and dinner. Aside from that, there are also specific categories like soups, salad entrees, chicken, fish, vegetarian and loads more. There is no type of food that cannot be healthy enough or impossible to be maid easily and quickly. The recipes people can come up with often keep coming with no possible end in sights. This is due to the many innovations that are continuously developed by the most skilled of chefs and cooks. Because of that, only a few will be listed and described. Either way, once you get the idea, worrying about what uniquely French treat to make for dinner will not be an issue henceforth.

Eggs are favorites when it comes to breakfast. Part of that is due to the nutrition contained within a single egg. A detailed sample would be Nest eggs. Shredded wheat biscuits, unsalted butter, grated cheddar cheese, milk, salt, black pepper, paprika and of course, eggs are needed for this dish.

First off, the oven must be preheated to 350 degrees F and the custard cips greased. Crush the wheat biscuits, toss cereal and butter until both are well combined. Three tables spoons of cereal must be set aside with the others divided evenly among the cups. Press the mixture in an even manner against the sides and the bottom of the cups. Spread the cheese and break an egg over each cup. Add milk together with the salt and pepper. The reserved cereal must be spread around the edge of each cup and sprinkle the top with paprika. Bake it for fifteen minutes.

That is just one example out of many. There are more to choose from. Another would be the scalloped salmon, which can be made ready in just twenty minutes or so.

Another example of quick and easy healthy recipes is corn topped beef pie. It requires ground beef, celery, tart apple, pepper, cumin, corn muffin mix, whole kernel corn and one bottle of chili sauce. It can be prepared and left to stand for a combined total of forty five minutes before serving.

For salads and vegetable oriented meals, there are Chinese cabbage, creamy romaine and fresh minted garbanzo salad. Deserts include Avocado cheesecake, apricot cheesecake and baklava cheesecake. There are so many to choose from, it can be almost difficult to settle with just one.

Healthy Kind of Soup


This cream of asparagus uses yogurt instead of cream for a lower-calorie dish. Asparagus is sautéed in wild leeks and garlic and combined with white turnip, vegetable stock, and white wine to make a simple yet invigorating and elegant soup. The soup is pureed in the blender to get a smooth and creamy consistency and garnished with yogurt and cilantro. You can serve this as an appetizer or as a main dish with some crusty bread. You can also enjoy this delicious cream of asparagus soup either hot or chilled. Spring is the best season for preparing and cooking asparagus, although it is generally available the whole year. Select young asparagus with firm and bright green spears. The tips should be tight and perky and appear healthy not mushy or limp. Asparagus spears can be as thin as a pencil; the fatter ones are the more mature vegetables. The thinner asparagus are more tender and crisp while the thicker ones have a meatier and crunchier texture. If you are using thick asparagus for making soup, peel off the woody and tough exterior with a vegetable peeler. Choose asparagus that are uniform in size and as much as possible, cook it on the same day that you buy it. But you can wrap the bases of the asparagus with a damp paper towel and keep it in a plastic bag inside the refrigerator for up to four days. Alternatively, you can place the asparagus upright in a jar or container filled with an inch of water. Cove the asparagus tips and the container with a plastic bag. Asparagus is grown in sandy soils so rinse them very well with cold water before cooking. For larger asparagus spears, bend it until it snaps and throw away the woody end. 

Ingredients 

4 wild leeks OR 1 yellow onion, diced 
2 cloves garlic, minced 
2 tbsp cooking oil 
4C asparagus, chopped (1 bunch) 
1 small, white turnip, peeled and diced 
5 C vegetable stock 
1 C white wine 
¼ C fresh cilantro, chopped OR 1 tbsp dried cilantro 
1 C plain yogurt 
Extra cilantro for garnish 

1. The asparagus is washed and chopped discarding any woody stems. 

The rest of the vegetables are washed and prepared according to the ingredients list 

2. In the soup pot, combine oil, garlic, and leeks and sautee until softened 

3. Asparagus, turnip, vegetable stock, wine, and cilantro is then added. 

4. Heat to boil, then cover and simmer until the asparagus and turnips are very tender 

5. Blend the soup in batches until smooth 

6. Return pureed soup to soup pot, add yoghurt and heat through without boiling 

7. Garnish with extra cilantro

Pizza Like Tart

Two of the most popular cheeses in France are Camembert and Gruyere. If you combine them together in one dish, their chemistry is a lot like love. The addition of the plumpest, juiciest tomatoes ensures that this recipe is a match made in pastry heaven. So for your next wine and cheese party, consider making this super yummy and unbelievably easy to do tomato and cheese tart. The tart can be served by slicing it up into small and thin pieces. Chardonnay or Sauvignon Blanc will go spectacularly well with any of them. 

This cheese tart has a lovely color and form. It is eaten with a piece of bread or baguette, or would be wonderful with fruits and nuts, or served as first course to a French or Italian meal. You can also serve this as cocktail party hors d'oeuvres. This tart is best enjoyed warm, but it will still taste scrumptious even at room temperature. It can also be served as an indulgent side dish to fish, chicken, or salad. See how versatile a savory cheese tart can be. 

The soft and rich Camembert cheese becomes pungent and potent with age, while Gruyere is hard and a bit more aggressive. Further, it is nutty, and earthy, at times it is slightly sweet. Both cheeses are made from cow’s milk, and are lusciously creamy and make a mouthwatering tart. The former comes from Normandy. It is named after the French village Camembert, while the latter originates from Switzerland. It is named after the Gruyere valley of Fribourg. 

The tangy and sweet tomatoes and crispy golden crust very well complement the oozing warm cheeses. While it is being gently cooked in the oven, the aroma is absolutely gorgeous. The herbs such as parsley, rosemary, basil, and thyme which are added to the recipe make it even more aromatic and not to mention more flavorful. There is no need to season this dish with salt as both Camembert and Gruyere are mildly salty cheeses. 

When the Camembert used is labeled with an Appellation d’Originine Contrôlée au Lait Cru, it is guaranteed that it is made in Normandy in the traditional way using unpasteurized milk. It goes the same for Gruyere, the best of course, is Swiss made. Both cheeses are rich and earthy, so they will stand up well to tannic red such as Red Bordeaux wine or Beaujolais. 



Ingredients 

1 tablespoon(s) Dijon mustard 
1/2 cup(s) grated Gruyère cheese 
4 plum tomatoes, cut into 1/2-inch slices and seeds removed 
6 ounce(s) Camembert cheese, sliced into 1/8-inch strips 
1/2 cup(s) extra-virgin olive oil 
1/4 cup(s) fresh parsley, chopped 
1/4 cup(s) fresh basil, chopped 
1 teaspoon(s) fresh rosemary, finely chopped 
1 tablespoon(s) fresh thyme leaves 
1 small bay leaf, finely crumbled 
1 clove(s) garlic, minced 

1. To begin make the tart dough. In a pastry blender, combine and mix the flour, butter, salt, and pepper until the mixture resembles coarse meal. Mix in 2 tablespoons of the oil and the water using a fork, just until the bottom of the mixture begins to cling together. Add an additional tablespoon of oil if necessary. After gathering it into a ball, flatten into a disk, then wrap in plastic wrap, and chill for 30 minutes. 

2. Preheat oven to 375 degrees F. Roll out the chilled dough into a 14-inch circle and place it into a tart pan; set aside. Spread the mustard over the bottom of the tart shell. Now sprinkle the Gruyère evenly over the mustard while alternately placing a layer of the tomato and a layer of the Camembert over the Gruyère. 

3. Mix the remaining 1/2 cup of extra-virgin olive oil, all of the herbs, and the garlic together in a small bowl, and brush two-thirds of the mixture over the tart. Bake for 35 minutes on the middle shelf of the oven. Remove the tart and brush it with the remaining oil. Serve warm.

Saved by Seafood

There's nothing fishy about seafood. Really, nothing. This popular choice finds much importance in the Mediterranean and Japanese cuisines, both of which are touted for their health benefits. If you're on the lookout for a healthier diet, and as long as you aren't allergic to it, consider making seafood a big part of your meal. The sheer variety that it offers - fish, oysters, calamari, shrimp, lobsters, crabs, scallops, mussels - makes sure that there's something for everyone. Even if you are an extremely fussy eater, you'll still find sub-categories and sub-types of these above mentioned seafood.

After choosing comes the cooking. What a joy it is to cook seafood! You can boil it, broil it, bake it, grill it, fry it and steam it. And this is just a few straight forward methods you can apply. You can always mix them up. In fact, if you're feeling too lazy to cook, you can even have seafood raw! However, if you feel like cooking, there are so many basics you can start from. Seafood is something that can be incorporated in salads, soups, stir-fries, batter- fries, noodles, casseroles, etc.

STIR FRIED PRAWNS

The ingredients that you'll need for this recipe are:
Large prawns (shelled and deveined) - 250 grams
Garlic (finely chopped) - 3 to 4 fat cloves
Red Onions (finely chopped) - 1 big or 2 medium
Carrots (thin strips) - 100 grams
Red Cabbage (thinly shredded) - 150 grams
Broccoli (small florets) - 100 grams
Light Soy Sauce - 1 tbsp
Sesame oil - 1 tbsp
Salt - To taste
Pepper - To taste

Heat a non-stick frying pan and add the sesame oil. Now add the red onion and the garlic and stir for a minute and a half on low heat. Add the carrots, cabbage and the broccoli and stir for another two minutes. Move the vegetable to the sides of the pan and add the light soy sauce and the prawns. Add the salt and pepper. When the prawns turn opaque, mix in the vegetables from the side and stir well to ensure even seasoning. Serve on a simple white plate to draw attention to the colours of this seafood recipe

Not only is this dish healthy, it is very versatile. If you're not fond of broccoli or carrots or cabbage, you can always substitute them with vegetables like red and green peppers, zucchini, sweet potatoes, etc. You can also switch the soy sauce with a sweet and chilli sauce or an oyster sauce, and those of you who like some heat can add paprika to the dish.

Pansotti with Walnuts

Homemade pansotti is stuffed with chard and borage sautéed in olive oil and garlic and combined with pine nuts, Parmesan cheese, cream cheese, nutmeg, and marjoram leaves in this healthy gourmet recipe. The dish is seasoned with a delicious sauce made with walnuts, whole milk, breadcrumbs, garlic, olive oil, nutmeg, and Parmesan cheese. Serve this as a sumptuous appetizer or a light and nutritious main course paired with a bottle of Pigato dei Massaretti.

An Italian type of pasta stuffed with preferred ingredients similar to ravioli or tortelli, pansotti is made of a two-inch square dough folded into two with filling sealed inside, forming a triangle. The edges of the pasta can be cut straight or serrated for presentation and for a different sensation in the palate. Pansotti can be stuffed with vegetables, meat, mushrooms, and spices and make a filling pasta meal. This is a vegetarian dish that makes a light yet satisfying dish.

You only need flour and eggs to make simple dough for making the pansotti. For best results, use semolina flour, which is the preferred flour for making pasta. You can also use unbleached all-purpose flour if you can’t find semolina or if it is not available although the pasta will taste more like dough compared to commercially made pasta. Some Italian groceries or specialty stores may carry pansotti dough that is premade, which you only need to stuff and cook. This usually takes more time to cook until tender compared to freshly homemade pasta.

Chard and borage have a pleasantly bitter taste that is balanced by the nuts, cream and spices used in this recipe. Because of the ingredients used, the dish is intense and mild at the same time. It also has a wonderful texture of crunch and softness that is quite pleasurable in the palate.

Ingredients

For the dough:

2/3 lb. flour
3 eggs

For the stuffing:

1/2 lb. chard
½ cup borage
2 spoons pure cold-pressed olive oil
1/2 garlic clove
1 spoon pine nuts, nutmeg
1.8 oz. parmesan cheese
3.5 oz. cream cheese
salt
10 marjoram leaves

For the sauce:
3.5 oz. walnuts
3.5 oz. whole milk
1.8 oz. bread crumbs
1/2 garlic clove
1 oz. pure cold pressed olive oil
salt, nutmeg
0.88 oz. parmesan cheese

1. Mix the flour and eggs and knead until smooth. Spread the dough as thin and even as possible without breaking, using a rolling pin or pasta machine.

2. Clean the greens well and pat dry. In a pan, heat olive oil and sauté the garlic. Add the greens. Season with salt to taste and turn to high heat. Keep the lid on the pan for 5 minutes.

3. Mix the cooked greens, pine nuts, ricotta, Parmesan, and a pinch of nutmeg.

4. Cut rolled out dough into squares of about 2 inches each. Place a small amount of filling in the middle of each, fold into two forming a triangle, and close the sides by squeezing the edges. In a large pot, bring water to a boil and add 2 tbsp (30 mL) salt. Drop the pansotti into the water and cook until the pasta is tender, about 3 to 4 minutes.

5. Soak the breadcrumbs in a bowl filled with milk. In a bowl, mix the walnuts, garlic, oil, salt, a pinch of nutmeg, and Parmesan. Drain the bread and blend it into this sauce until creamy. Just before serving, dilute with some spoons of the pasta cooking water. Do not preheat the sauce before serving.

6. Serve the vegetable-stuffed pansotti with the sauce poured over the dish.

Sauerkraut Salad

The sauerkraut (sour cabbage) is a popular German dish of shredded and fermented or pickled cabbage that has a distinctively sour and refreshing taste that cuts into rich, oily, or spicy food. This is popularly served alongside sausages, barbecues and other meat entrees. It is similar to coleslaw, except that the cabbage in sauerkraut has been aged for a month or more. It can be used in various ways as an appetizer or can accompany many dishes.

The sauerkraut has a fairly long shelf life and can be kept for years if stored properly because sauerkraut is pickled. It is available prepared and bottled in most groceries and German food stores. Sauerkraut contains many vitamins and minerals and a high amount of lacto-bacilli, which aid in digestion. Because it is raw and fermented, no additional bacteria are needed to lacto-ferment the cabbage as they are already found on the leaves of the cabbage.

In this recipe, it is made into a refreshing salad. The sauerkraut is mixed with bell peppers, onions, and celery and dressed with a sweet vinaigrette dressing. It is sweet and tangy and very simple and easy to prepare. Sauerkraut salad is an interesting alternative to the usual salad greens and makes a stimulating appetizer. This is an exceptional dish to serve in picnics or for you to bring in barbecue parties and potluck requests.

You can buy ready made sauerkraut at specialty stores and large supermarkets. But if you prefer making them yourself at home, do it in advance before you plan to serve it with the salad. The cabbage is washed then finely sliced. It is then placed in a large pot mixed with salt to draw out moisture. The the cabbage is mashed with a vegetable masher to extract the juice from it. The moisture drawn out from it is enough to cover the cabbage completely. It’s important to keep the air out so as not to spoil in the fermentation process. Some add wine to give it an invigorating quality. The cabbage is then placed in an airtight container and allowed to ferment for four to six weeks before it is ready.

Ingredients

1 qt. sauerkraut
1 medium-size bell pepper, chopped
1 medium-size onion, chopped
1 cup celery, chopped
1 cup granulated sugar
1/2 cup olive oil
1/4 cup vinegar

1. Prepare all the vegetables and wash the before chopping.

2. Mix all ingredients together in a large bowl and chill in refrigerator for at least two hours before serving.

Healthy Chocolate Torte

Chocolate comes from a fruit called a pod that grows on the cacao tree. A seedling tree generally must mature for five years before it produces pods, with peak pod production happening at 10 years. A cocoa tree can bear fruit and produce pods for 30 to 40 years. Each pod is similar in size to a football, and contains up to 50 cocoa beans. To make one ounce of milk chocolate, it takes 4 cocoa beans, and one ounce of dark chocolate requires 12 beans. An average American or Canadian will consume about 12 pounds of chocolate per year. However, the Swiss are the world’s largest consumers of chocolate, eating about 22 pounds of chocolate per person per year!

Chocolate can be bittersweet, and we don’t mean literally. Although chocolate has many benefits to your health, some facts about how chocolate is made may make you want to munch on a different snack, or at least lower your chocolate intake.

What a chocolaty torte, an unforgettable treat for the chocolate lovers. Being flourless it’s a gluten-free torte, hence, very suitable to those who are allergic to gluten containing foods. Dive into the indulging chocolate torte and eat’em up all at once. Not too sweet and not too creamy, so having it every other weekend won’t be a bad idea even if you are diet conscious.

Ingredients

3 oz. unsweetened chocolate
7 ½ oz. (1 ½ cups) unblanched almonds
5 eggs, separated
2 egg yolks
¾ cup granulated sugar
Salt

For the Buttercream Frosting:
3 oz. sweet butter
½ teaspoon pure vanilla extract
½ cup granulated sugar
2 eggs
3 oz. unsweetened chocolate

1. Preheat the oven to 300 degrees F. Grease a 9 x 3-inch baking dish.

2. Chop the chocolate roughly. In a food processor, pulse together chocolate and almonds till powdered. Separately, beat 7 egg yolks and sugar with electric beater till yolks are lemon-colored but not thick. Mix with chocolate mixture. Now, in another bowl, beat 5 egg whites and salt till mixed well. Mix well together egg whites and chocolate mixture.

3. Dollop the batter into baking dish and bake for 65 minutes. Let the cake cool for 15 minutes. Remove the cake from baking dish and freeze for almost 1 hour.

4. In the same time,to make buttercream, beat butter and vanilla with an electric beater. Add cream and sugar and beat for 4 minutes. Add 1 egg and beat on high for 2 minutes and then add another one for same time. Melt the chocolate, stirring, in a double broiler on medium flame. Blend butter mixture and chocolate. Refrigerate till firm.

5. Remove cake from freezer and cut in two layers horizontally. Beat butter cream till smooth. Place cut side up on the platter. Spread 1/3 of cream on top of first cake layer. Put second layer on top. Place the remaining cream on the top and sides of the cake.

In today's world, being easily persuaded to eat a juicy and fatty burger and that slice of pizza loaded with beef, cheese and the other heavenly food choices on earth than your leafy greens for lunch is an understatement. People, even though they do not know it yet, love to live their lives on the edge. Leading a Healhy Life by Eating

Living healthier begins with the food you eat. We all know we should eat plenty of fresh fruits and vegetables, minimal prepackaged foods, avoid fast foods, and make healthy food choices overall. In addition making sure these eight foods are in your diet will help you to live healthier.

Chicken and rice cakes

This meal of the week is a bit different. Although I have aimed this at bodybuilders on a pre contest diet, this recipe is one of the best choices for anyone with weight loss plans who are after a tasty meal idea. As I am really into my food, I looked at better ways to cook chicken and rice for pre contest. As this diet is extremely strict you are very limited with the type of seasoning you can use. Anything with sugar is a massive "NO NO" and if you look at the ingredients on most seasonings you will see sugar and salt. All sauces are out of the question as these have a big calorie content, most again are loaded with sugar and salt.

Ingredients
4 chicken breasts
300g of wholegrain rice (uncooked)
Ground Black pepper
1 chili
1 clove of garlic
A bunch of fresh coriander
No sugar/ salt seasoning.
Olive oil or "1 cal none stick spray"

Step 1
Cook the rice so it is ready to eat, leave this to cool slightly but don't allow it to go totally cold

Step 2
Wash and cut the chicken breast into chunks. We are not looking for anything pretty here, just chop it up and spray with the 1 cal none stick spray a few times.

Step 3
Crush or finely chop the garlic (If you have seen good fellas, you can use a razor blade) and cut the chili up. Make sure you remove the seeds from the chili here if you don't want it to be too hot.

Step 4
Pull apart or chop the coriander finely and mix with the garlic, chili and coriander.

Step 5
Season the chopped chicken with the Singapore seasoning or what ever you chose to use. (the Singapore seasoning will give the food a nice spicy Asian taste). Then mix in the chili, garlic, pepper and coriander. It is best to coat all of the chicken with this seasoning, so get stuck in to it with your hands.

Step 6
Put the raw chicken covered in seasoning into a food processor and also add the rice. Blend this in short bursts, you don't want to make a raw chicken and rice soup! It is personal preference on how fine you want to go here but I like to keep it fairly course.

Step 7
Once this is mixed or "Blended" take this out of the blender and put into a bowl. Make the mixture into a ball. Half the ball and half this again, you should end up with 4 balls... Nice! Squash these balls down so they are about an inch thick

Step 8
Use the 1 cal spray to lightly grease a baking tray or some tin foil, then place the 4 cakes onto the tray and again spray with 1 cal spray (This will give the cakes a crispy finish) or if you are not on a pre- contest diet, you could top with Parmesan cheese. (I haven't tried this but I imagine that it would finish off the cakes nicely)

Step 9
Put in a preheated oven at 180 Celsius or gas mark 4 for around 30 mins or until they have started to brown. Make sure that these are cooked thoroughly before eating.

4 T-bone steaks, 1 to 1 ½ in. thick
½ cup catsup
2 tablespoons melted butter
1 tablespoon Worcestershire sauce

1 tablespoon freshly squeezed lemon juice
1 tablespoon strong mustard
Salt

It also thins the blood and is best avoided before an operation or childbirth because it may increase the risk of bleeding and interfere with blood clotting.

Ingredients
1/2 lb. puff pastry with butter
1 oz. almond powder
2 apples
2/3 cup cream
3 ½ tablespoons sugar
¼ tablespoon cinnamon powder
powdered sugar

1. Peel the apples, quarter, remove the core, and then slice thinly.

2. On a round pastry, place a circular mold at the middle then spread the almonds around evenly. Remove the mold and arrange the apples around the circle of almonds, arranging it into a swirl. Bake the pie in a preheated 450 degrees F oven.

3. Mix some cream, sugar, and cinnamon then reduce in low heat. When the pie is about two-thirds cooked (about 10 minutes), add the reduced mixture then put it back in the oven till cooked (which will take about another 10 minutes).

4. Finish it off with multiple glazing. Start the first glazing by putting icing sugar around the edges. Put it on a salamander oven. Add ungrounded almonds around the edges then add another coating of icing sugar. Put it back in the salamander oven until caramelized and crunchy.

5. Serve it with a double gruyere cream, to add the smoothness as well as vanilla ice cream. Bon appétit!

Ingredients

4 large papayas, peeled
¾ cup granulated sugar
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 tablespoons butter, softened
2 tablespoons cornstarch
1 egg
Pie dough for a 2 crust pie
1. Preheat oven to 350 degrees F.

2. In a mixing bowl combine together brown sugar and white sugar. Mix well and then add your papayas. Toss lightly and coat papaya with sugar mixture. Let rest for about 10 minutes.

3. After 10 minutes, transfer papaya and its juice is a saucepan and cook for about 10 minutes. Then add in the nutmeg, allspice, cinnamon and the salt. Cook, stirring occasionally about 10 minutes more or until papayas are tender but not too soft.

4. Remove from heat and let papaya mixture cool. When cooled add beaten egg and mix well, but see to it that fruits don’t fall apart.

5. Pour papaya filling into prepared graham cracker pie crust and bake for 30 to 45 minutes.

6. Remove from heat and let cool

Easy Appetizers

Everyone loves to start a party with appetizers. It is an easy way to "break the ice" and get people relaxed and comfortable. When going through your appetizer recipes, however, it can seem daunting. Then, since you have a little more room, add a piece of fruit. Some fruits that can be considered are apple, cantaloupe, and grapes. Really, there is a lot of room to be creative here. You could even top it with some jam if you didn't have any fresh fruit.

If you and your friends are calorie conscious, you could skip the bread and crackers and use a slice of cucumber as your base. Use a cucumber slice and then put some smoked salmon on top. Use low-fat cream cheese and top with some fresh dill. That is low in calories but still looks festive! Starting with a vegetable as your base really makes your appetizer recipes nutritious and figure friendly!

You can always go the traditional route for your appetizer recipes. That would include cheese spreads, meatballs, and a shrimp tray. The shrimp tray would be the lowest calorie dish in this fare. Dipping Brussels with Beer

This recipe was adapted from The Norman Rockwell Illustrated Cookbook. If you’re a fan of Brussels sprouts, you will enjoy the different flavor that beer can produce to the vegetable. You can try it with any variety of beer, depending on your preference. An option is to use ale, which has a much stronger flavor compared to beer. The recipe calls for fresh Brussels sprouts, ale or beer, salt, and butter. These very simple ingredients can be prepared in less than 15 minutes and cooked for another 10 minutes. You can enjoy this dish with some of your friends as the recipe serves 4.

Ingredients

1 lb. fresh Brussels sprouts
Ale or beer
½ teaspoon salt
2 tablespoons butter

1. Make sure to wash the Brussels sprouts thoroughly. Remove leaves that have turned yellow or brown. Remove the tough ends at the stem. To make sure the sprouts cook faster and even, cut an X onto the bottom part of each sprout.

2. In a medium saucepan, pour the Brussels sprouts generously. Completely cover the vegetable with either beer or ale, depending on your preference.

3. Bring the saucepan to a boil and allow the vegetables to simmer until just tender, or around 5 to 10 minutes. The number of minutes will depend on how fresh the vegetable is. If the liquid evaporates, add more ale or beer. When cooked, drain the liquid. Stir in butter and season with salt.

Heatlhy Cornmeal Rolls

A great meal is never complete without rolls. They make for a great pairing to some of the wonderful soup you have cooked up in your kitchen. They are also wonderful with just about any dish you could think of. People eat roll with salads, roasts, and a whole lot more. You could never go wrong when you have a fresh batch of rolls in your dish. Making these rolls are pretty simple, and even a beginner could make one.

Ingredients

1 ½ cups milk
½ cup shortening
½ cup granulated sugar
2 teaspoons salt
2 tablespoons dry yeast
½ cup warm water
5 to 5 ½ cups all-purpose flour
2 eggs
1 cup corn meal
½ cup melted butter

1. In a saucepan, bring your milk and salt to a simmer on medium heat. Whisk in cornmeal and cook until cornmeal is thick. This would take around 2 minutes and don’t forget to stir constantly.

2. In another bowl, whisk your brown sugar, yeast and water with the use of an electric mixer. Set aside for 10 minutes.

3. With the use of a dough-hook attachment on your electric mixer, mix your cornmeal mixture and 2 eggs on low speed. Add flour slowly until a soft dough is formed and kneed on medium-low speed for 5 minutes.

4. Prepare another bowl by brushing it with olive oil and place dough inside. Cover with plastic wrap and wait for dough to double in size – around 3 hours.

5. In a 13 x 18 inch baking sheet, sprinkle cornmeal and roll out dough in the surface and divide into 3-ounce pieces. Roll the pieces of dough into a ball and place on the baking sheet about 1.5 inches apart. Cover your baking sheets with an oiled plastic wrap and set aside for another 30 minutes until dough has risen again.

6. Place your oven to 375F. Brush your rolls with beaten eggs and make parallel slits on top of your rolls. Bake for 20 minutes or until golden. Transfer on a rack to cool and serve.
