Apple Granola Cookies

A delicious snack and a nutritious breakfast treat, just with the granola you have which comes in handy this apple granola cookie recipe is quite easy to prepare at home.You can actually make Granola from various recipes as well as ceareal boxes. That only shows that you can wonderfully experiment on this cookie recipe as you wish. In this interesting snack, you would need granola, chopped apple, salt, cinnamon or nutmeg,baking soda, whole wheat flour, all purpose flour, egg, lemon peel, lemon juice, milk, butter and brown sugar. To come up with the glaze that adds to its sweetness, you would just need lemon juice that is freshly squeezed and confectioner’s sugar. 

The secret to a perfectly soft texture in the center of the cookie is to make sure the brown sugar and the butter are formed into a cream before the other ingredients are added. If you are in the mood too create a tasty homemade granola, aside from baking into cookies as in this recipe, you can either make it into bars or cereals. You just then mix seeds, dried fruits, nuts, vegetable oil or butter, maple syrup or honey, and old-fashioned rolled oats then they are just baked for almost 30 minutes or till golden brown.

Ingredients

1 ½ cups firmly packed brown sugar
½ cup butter, softened
¼ cup milk
1 tablespoon freshly squeezed lemon juice
1 teaspoon freshly grated lemon peel
1 egg
1 ½ cups all purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon nutmeg or cinnamon
¼ teaspoon salt
1 ½ cups finely chopped apple
1 cup granola

For the Glaze:
¾ cup confectioner’s sugar
2 to 3 teaspoons freshly squeezed lemon juice


1.The oven is preheated to 375 ⁰ F. 

2.Using the mixer’s bowl, create a cream with the use of brown sugar and butter. Add the lemon peel, egg, milk and 1 tablespoon lemon juice. They all must be stirred well to blend. Add the whole wheat flour, the all purpose, baking soda, salt and spice. They all must be stirred well to blend. Fold in the granola and apples. 

3.When dropping the dough, teaspoonsfuls should be heaped 2 inches apart on a certain cookie sheet. It is then baked for 9-13 minutes or till golden brown. The cookies then are moved to a wire rack to let them cool completely. 

4.Meanwhile, for the mixture to drizzle easily, stir the lemon juice and the confectioner’s sugar together. The glaze then are drizzled over the cookies as soon as they are cool. The glaze then should be completely dried before the cookies are stored or stacked.
