Lemon Cake

This is a double lemon recipe. The flavor of the lemon in the cake comes from the lemon flavored gelatin. The lemon juice and lemon rind are used to make the glaze to cover the cake. Sprinkle the granules in a bit of cold water to avoid clumping. Let the powdered gelatin stand in the cold water for about 5 to 10 minutes, then pour the hot water over it. Stir until completely melted.

Ingredients
1 pack lemon flavoured gelatin
1 cup very hot water
4 tablespoon vegetable oil
1 pack cake mix, yellow
4 large eggs, well beaten
3/4 cups sugar
2 whole lemons
1 lemon zest - grated

1. Dissolve the gelatin in hot boiling water and allow it to cool. Then add the cake mix, eggs, sugar, water and oil. In a greased baking pan pour the batter.

2. In a 350 degrees F preheated oven bake it for about 45-55 minutes, or until a toothpick inserted in the center comes out clean.

3. Allow to cool. In the meantime, by dissolving the sugar in the lemon juice make the glaze. Grated lemon rind may be added to glaze. Drizzle the glaze over the cake when it is cool.
